- BYO is ONLY available to groups where one or more choose to stay at Cotter House. Guests normally have the exclusive use of the house and facilities with BYO privilege.

Scallops served in filo croutes with a Mornay sauce
Prawn skewers on fennel and lemon salad with coriander and walnut dressing
Poached Smokey chicken fillets served with Oyster sauce on a shallot salad with curly endive
Spinach and sesame feuilette with apple chutney and cider dressing
Cardamom and orange glazed Duck confit on mango relish

Pan-seared Salmon with spring onions and caramelised ginger
Double lamb cutlet on a fig tart with Moroccan aromatic sauce
Seared Loin of venison with Red currant jus and apple chutney
