INSPIRED MENUS FOR A CORDON BLEU CUISINE EXPERIENCE

MENU

French Hors d’oeuvres served with
Choice of New Zealand Bubbles or Aperitifs

Entrée – 1st. Course - Choice of

Oven grilled Scallops au Gratin, with a Gruyere and Echalotes sauce
Quenelles of Hapuka with choice of seared prawns, crayfish tails (if available)  or scallops
Seared duck breasts served on a Kumara or Parsnip puree

Main – 2nd Course - Choice of

Dukkah Crusted Lamb Racks with a Red Currant Jus
Grilled salmon fillet, with a soy and honey glaze
Confit of Quails served with new potatoes in a Yorkshire pudding basket
Pan seared Ostrich  or Venison Fillets with a Green Pepper sauce
Roasted Poussins, stuffed with pinenuts and herbs, glazed with orange sauce

3rd. Course

A selection of silver served season vegetables, e.g.
Creamed leeks with echalotes
Steamed New potatoes
Steamed Asparagus drizzled with olive oil and herbs
Or Baby Beets with an aged balsamic and honey sauce

4th. Course

Spinach and Mesclun salad served with tomatoes sour cream dressing and slivered almonds

Dessert - 5th Course

Choice of Mini cheese cake  with a Passion fruit Coulis, Crème Caramel
Kaffir Lime and Lemon grass coconut Panacotta served with Rose Petal syrup

Chestnut Chocolate marquise with a Berry coulis

Tea/Coffee Station

Freshly brewed plunger tea and Coffee

Petits Fours – choice of cheese platters

Stuffed avocados with Prosciutto ham

Grilled Brown mushrooms stuffed with pine nuts and herbs


Main – 2nd Course


Baked Gougere filled with Smoked salmon and Creamed cheese with mascarpone

Steamed asparagus with a Hollandaise sauce.


3rd. Course


Side salad

Caesar Salad with bacon, boiled eggs, Parmesan and an Aioli Sauce


Dessert


Fruit ginger cakes with Limoncello glaze

Fresh strawberries

Freshly brewed plunger tea and Coffee
